Shortbread cookie rolled in crushed almonds and filled with the fall colors of various Knotts Berry jams Hands On: 20 minutes Total: 45 minutes Makes: 2-1/2 dozen (1 cookie per serving) ingredients PAM Original No-Stick Cooking Spray 2-1/4 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 2/3 cup granulated sugar 1/2 cup butter, softened 1 egg, beaten 2 teaspoons vanilla extract 1/2 cup sliced almonds, finely ground or crushed 1/4 cup Knott's Berry Farm Seedless Strawberry Jam 1/4 cup Knott's Berry Farm Seedless Boysenberry Jam 1/4 cup Knott's Berry Farm Pure Orange Marmalade directions 1. Preheat oven to 375F. Spray 2 baking sheets with cooking spray. Combine flour, baking soda, and salt in small bowl; set aside. 2. Combine sugar and butter in large bowl using electric mixer on medium-high speed until creamy. Reduce speed to low; blend in egg and vanilla. Gradually add flour mixture into butter mixture until well combined; it will be stiff. 3. Divide dough in half. Shape each half into 8-inch long roll. Place almonds on wax paper; roll dough in almonds until well-coated. Cut each roll into about 16 (1/2-inch thick) slices. Place slices, cut-side down, on cookie sheets; press thumb into each slice to make an indention. Bake 10 minutes or until golden brown. 4. Cool 10 minutes.
