2 Tbsp butter, melted 2 med-sized sweet red peppers, cut into 1/4" strips 2 Tbsp vegetable oil 2 med-sized sweet yello peppers, cut into 1/4" strips 1 1/2 c finely chopped onion 8 oz Cheddar cheese, thinly sliced 3 cloves garlic, crushed 1 1/2 c sour cream 1/2 tsp salt 1 1/2 c sour cream 1 tsp ground cumin 4 eggs, lightly beaten 1/2 tsp dry mustard paprika 1/2 tsp chili powder 2 med-sized green peppers, cut into 1/4" strips
Combine melted butter and vegetable oil in a large skillet; place over medium heat until hot. Add onion, garlic, salt, cumin,dry mustard and chili powder; saute until onion is tender. Add peppers; saute 10 mins., stirring occasionally. Layer 1/2 the pepper mixture in a greased 11x7x2" baking dish. Top with 1/2 the cheese slices; repeat layers, using remaining pepper mixture and cheese slices. Combine sour cream and eggs in a medium bowl; beat ith a wire whisk until blended. Pour egg mixture evenly over pepper mixture. Sprinkle evenly with paprika. Cover and bake t 375 degrees for 30 minutes. Remove cover, and bake casserole an additional 15 minutes.
