Pumpkin Bread 

Ingredients: 
* 3-1/2 cups all-purpose flour 
* 3 cups sugar 
* 2 teaspoons baking soda 
* 1-1/2 teaspoons salt 
* 1 teaspoon ground cinnamon 
* 1 can (15 oz.) canned pumpkin 
* 1 cup vegetable oil 
* 2/3 cup water 
* 4 eggs 
* 1-2/3 cup (10-oz. pkg.) REESE'S Peanut Butter Chips 
* 1 cup chopped nuts 
* 1 cup raisins(optional) 
Directions:
1. Heat oven to 350°F. Grease and flour three 8-1/2x4-1/2x2- 1/2-inch loaf 
pans. 

2. Stir together flour, sugar, baking soda, salt and cinnamon; set aside. Stir 
together pumpkin, oil, water and eggs in large bowl; gradually add dry 
ingredients, stirring until well blended. Stir in peanut butter chips, nuts and 
raisins, if desired. Pour evenly into prepared pans. 

3.. Bake 55 to 65 minutes or until wooden pick inserted in center comes out 
clean. Cool in pan 10 minutes; remove from pans to wire racks. Cool completely. 
3 loaves.

Pumpkin Bread

My mother has made this pumpkin bread recipe each year around Thanksgiving 
since I was a little girl. I often make loaves and give as gifts to friends and 
teachers. This bread is very moist and dense with a lovely spiced pumpkin 
flavor.

1½ hours 25 min prep 
20 servings 3 9x5x3-inch loaves 

5 cups flour 
3/4 teaspoon baking powder 
3 teaspoons baking soda 
2 1/4 teaspoons salt 
1 1/2 teaspoons cinnamon 
1 1/2 teaspoons nutmeg 
1 cup shortening 
4 cups sugar 
1 1/2 teaspoons vanilla extract 
6 large eggs 
3 cups canned pumpkin 
1 cup water 
1 1/2 cups nuts, chopped 


Grease three 9x5x3-inch loaf pans. 
Preheat oven to 350 degrees.. 
Sift together dry ingredients; set aside. 
In a large bowl, cream shortening, sugar, and vanilla. 
Add eggs one at a time, beating well after each addition. 
Add pumpkin; mix well. 
Sift in dry ingredients alternating with water. 
Mix until smooth. 
Fold in nuts. 
Turn batter into prepared pans. 
Bake for 45 to 55 minutes.

PUMPKIN BREAD

1 1/2 c sugar
1 tsp baking soda
2 eggs, beaten
1/4 tsp baking powder
1 c cooked, mashed pumpkin
3/4 tsp salt
1/2 c vegetable oil
1/2 tsp ground cinnamon
1/4 c water
1/2 c chopped pecans/walnuts (optional)
1 2/3 c all-purpose flour

Combine sugar and eggs in a large bowl; beat at medium speed of an electric 
mixer until well blended.  Add pumpkin, oil and water, mixing well.

Combine flour, baking soda, baking powder, salt, ground cinnamon, and group 
cloves; stir well.  Add to pumpkin mixture, mixing well.  Add chopped pecans, 
if desired, stirring well.

Pour batter into a greased 9x5x3 loafpan.  Bake at 350 degrees for 1 hour and 
10 minutes or until toothpick inserted in center comes out clen.  Let cool in 
pan 10 minutes; remove from pan, and let cool completely on wire rack.  Makes 1 
loaf.
