With CUPS, I'm don't remember off the top of my head, but I believe there is a way to create a text only queue. You might want to setup a box with CUPS and use that to act as an intermediary for the iOS devices. I had and older HP Color inkjet (930?) that was hooked up for a while to a Fedora Core box that was using LPD that worked as well.
