If it's actually the envelope from that you're keying on, you can do
that pretty simply with the sendmail 'access' file.  That approach
doesn't scale particularly well, though, so if you're going to want to
continue tuning anti-spam measures, jumping into spamassassin or some
other full-fledged solution is worthwhile.

There's spamassasin for content filtering.  You may also want to install
Amavis to catch viruses.
