fetchmail  pine, links, vi, OpenOffice, qcad, gimp 
ImageMagick, maxima and (sometimes OpenOffice is not good enough) latex.

I also remember a thread a bsdforums.org
called something like what X app can you
not live without that had a few goodies
in it.
For me: Eterm, Xterm, Acroread, Gimp
Mozilla, TextMaker, SciTE, Xmms, Mplayer
and some of the little Gnome baubles...
