After freebsd-update -r 9.1-RELEASE I cannot install any port from
packages. Should I additionally configure my system somehow? Where did
the portupgrade took the packages from last time / before upgrade?

I have been able to use the make release command to create a custom iso
for FreeBSD which includes some changes to the various bsdinstall scripts.

Just do a ping on the host (not jail)
setfib 0 ping anyLocalIP - works
