I run multiple VMs using VMware Fusion. VMware has *nix support in their
Workstation product.

Id say definitely XEN XCP (Xen Cloud Platform) its free, and i run FreeBSD
XENHVM guests on it all day long

My biggest hurdle at the moment is getting multiple hosts on one machine 
and setting up the VRDE to use different ports.
