On at least aim and jabber they are entirely separate things, so you can't just invite someone into your IM conversation, but rather you need to create a chat and all join it. There is a jabber proposal to handle 'converting' an IM into a chat, but I don't know if many things support it yet. Further, currently gaim treats IMs and chats differently and as such can't readily convert one into the other.
