the switch to Java 11 being the minimum is now landed on all main branches
of the geo-trio.
Stable and maintenance still have to build with Java 8 too so... careful
with those backports!

Too late, wiped them out. Java 17 builds can be created by copying over the
Java 11 ones though.
Not sure we need them until Java 17 is officially supported though (right
now it's experimental with a large bunch
of "add-opens" to have tests run).
