What do you mean by "dump all the cached tiles"? Truncate?
GWC itself has a MassTruncate -
http://geowebcache.org/docs/current/rest/masstruncate.html - I guess
it's available in GeoServer but haven't tested it.
Alternatively I some variant of rm -rf would definitely delete them,

Currently I have published a raster with 4 bands: Red, Green, Blue, NIR. I
want users to be able to see both the RGB as a NDVI health index. However
for the latter I would need to do a raster calculation with both the Red
and the NIR.
