You may wish to talk to Gabriel (who is the "module owner" for arcsde support). 
I know his organisation offers commercial support as well.

As I understand it you can override the setting in geoserver; in order to 
publish your layer with a valid epsg code. I know it is a bit of fun 
translating between ArcSDE, EPSG and SRS (spatial reference system) used by WMS.

Other than that join the geoserver users list for these kind of questions.
