Hi Andrew,
JAI exposes image processing operators for non geo-referenced image. It
uses an API that is not with WPS, at least right now.

Bridging the two indeed requires some java programming, indeed. Typically
this happens by writing a process, see for example this one:
https://github.com/geotools/geotools/blob/master/modules/unsupported/process-raster/src/main/java/org/geotools/process/raster/BandSelectProcess.java
this one works off geo-refenced raster, and it's actually delegating to
another class that eventually calls onto JAI:
https://github.com/geotools/geotools/blob/d1f91461618b220a3272b0d9ffb807ef6fe68721/modules/library/coverage/src/main/java/org/geotools/coverage/processing/operation/BandSelector2D.java#L1

These bridges are built on a as-needed basis, I'm not aware of more
processes being built at the moment.
