But if you saved that as XCF and then reload, attempting to edit such a layer will give you a choice: throw away all the painting and edit the text, or not edit as text. Ah, OK. When I look at my XCF file, the text layers have names like New Layer instead of the actual text in the layer. Plus, I see a thumbnail of the text layer instead of the stock icon you mention.
