if we were to use shred to delete a file on a gluster volume, will the
correct blocks be overwritten on the bricks?
(still using Gluster 3.6.3 as have been too cautious to upgrade a
mission critical live system).

I've got a strange issue where on all clients I've tested on (tested on
4) I have "transport endpoint is not connected" on two files in a
directory, whereas other files can be read fine.
Any ideas?

BTW, I have an rsync log from both servers if it's of interest (command
args called, duration of execution and exit code), so let me know if you
want this.

I found that when I tested, the amount of space reported was dependant
on the free space on the smallest brick.
How much free space do you have on your bricks?
