An astute flatpak user noticed that the version reflected in the splash screen and About GnuCash window wasn't quite right, showing the release commit as a revision of 5.3 instead of plain 5.4. I tracked the problem back to the tarball generation, so I've made new tarballs, AIO bundles, and flat
