Well, turns out I found the issue.

When I executed the command

$ keytool -importkeystore -srckeystore example.com.crt.pkcs12 -srcstoretype 
PKCS12 -destkeystore keystore -srcalias 1 -destalias cruise -deststorepass 
'serverKeystorepa55w0rd' -destkeypass 'serverKeystorepa55w0rd'

in windows... the password actually becomes 'serverKeystorepa55w0rd' (with ' ' 
included in the password).

So, removing those from the command will do it :) (using GnuWin32 to execute 
openssl)
