To this day, I still savor the amazing aromas that wafted through the entire house. My favorite part of the whole experience took place on Christmas day itself as we got to exchange and share all these wonderful goodies with the neighbors. In this segment I will share some of these mouthwatering recipes with you, all of which were sent to me by some of my close friends. So get together with your family and friends, especially your kids, and try making some of these delicacies from scratch. I am sure you and your family will revel in the whole experience as I did and continue to do to this day. Seasons Greetings everyone and happy eating! If you would like to share one of your favorite Christmas sweet recipe please send it to me at [EMAIL PROTECTED] Here is one of my favorite recipes, my 7 year old son loves to help me in the kitchen so he will be thrilled to assist me in making these delicious cookies this year. They are made of semonlina/rava & coconut and they are called: BOLINHOS: 1 1/2 lb. semolina, 17 egg yolks, 1 1/2 lb. sugar, 1 1/2 coconut (grated), 3 tablespoons of melted butter, a few drops of essence. Make a sugar syrup to a thin spoon-coating consistency. Stir in grated coconut and boil till dry. Remove from fire and allow to cool. When cold, add egg yolks and roasted semolina and essence. Put the mixture into a bowl, cover and keep aside for quite some time to rise. Then form into small cakes, put on a greased baking tray and bake in the middle of the oven. This is a lighter version of Bolinhas: 4 egg yolks, 1 cup powdered sugar, 1 1/2 cups semolina, 1 1/2 cups of ground cashew nuts, 1 teaspoon cardamom powder, 2 cups grated coconut. Beat egg yolks and sugar to a light and creamy consistency. Mix in the rest of the ingredients except the coconut and keep covered for 8 hours. Mix in the coconut. Shape into small balls (about 12), flatten slightly and place on the greased baking tray. Bake in a pre-heated oven till the cookies brown a little.
