I download a DEM file( SRTM geotiff) that I opened in GRASS 6.4.1
One problem I am facing is that I want to extract a part (my area of
interest) of this DEM
I don't know how to proceed

Hi Yada,
If you have a raster map with your area of interest you can use
r.mask ...
r.mapcalc DEM_clip=DEM
or
g.region rast=mask_file
g.region res=DEFINE DESIRED RESOLUTION
r.mapcalc DEM_clip=DEM
