We're looking to upgrade our HAProxy hardware soon. Does anyone have any
recommendations on the things we should be looking for? e.g. Are there any
NICs we should use/avoid?
Our site primarily serves lots of small objects.

Your issue seems to be rather with Apache, but could you tell us which
version you are using and how it is configured (mpm) ?

while now, sending all logs via syslog to a separate server.
A single frontend is used to serve all public requests, and currently
logs everything. We would like to just log requests for dynamic pages,

This sounds like a keep-alive issue.
HAProxy currently does not support connections that use HTTP keep-alive,
in that HAProxy will only process the first header sent in a connection,
the rest is considered data. Have a read of section 1 of the
documentation for more information on
