Look at the code for UTIL_SetModel() (in the server game util.cpp)

If you have the model index for the entity (GetModelIndex()) you can do
this:
        const model_t *mod = modelinfo->GetModel( i );
        if ( mod )
        {
                Vector mins, maxs;
                modelinfo->GetModelBounds( mod, mins, maxs );
