@ Matthias: You are right.

I made an installation of Ubuntu 16.10 and purged all packages of libreoffice.
Result is as described in Description.
I would expect that purging all libreoffice packages removes the icons too.

Removing all libreoffice icons results in showing the standard system icons.

Tried that, didn't work. I install AOO regular when a new build is available.

Nevertheless, the MIME-registration should work even if the LO icons are
present.

You have to do this before installing AOO.
The mime handling is treated during the installation of the basic packages not
by the desktop-integration, IMO.

IMO a problem of Ubuntu. The icons won't be deleted uninstalling libreoffice.
You must delete them manually:
Search as root in nautilus for libreoffice* and delete the files.
