Thanks very much for your reply. In the end I got the current position of the
page and added a couple of fake tables in order to force the summary to the
bottom.
A bit of a hack but it works well non the less.

I have managed to create an invoice style layout using Itext in order to
display a "table of items" which is fixed height and a "summary table"
underneath at the bottom which displays the total etc. I have an issue now
whereby when the items exceed the length of the page the summary tab
