I would like to know why the default charset for the table 'status' is latin1
while it is utf8 for other tables like 'authreg', 'roster-items' etc. Would it
be a problem if I changed it to utf8. I am not able to store status messages
with accents and other non-latin1 characters.

Impossible. XMPP is designed to keep contact lists server-side.
