Is there a feature within JAWS to have it say capital letters instead of
pitch?

I mostly agree. However, it's true that although you can still choose which
Microsoft or non-Microsoft products to use, they're making change to
non-microsoft alternatives harder than it was in the past, with no mention to
the limitations imposed in Windows 10 S.
Regarding Office accessibility,
For me it is all searches in MS-Word. I have not tried it in any other
application.

Most of the times, the paragraph marker character is not actually inserted in
your document, but Word has the option to show these marks turned on. While
these aren't printed by default, those markers may be useful to easily view on
screen the exact position of line breaks and number
