defmodules should not affect how you work with GUIs from Jess at
all. Is there a specific problem you're having?

Making a GUI in Jess is exactly like making the same GUI in Java;
therefore, you have exactly the same options for using images as you
would in Java. For example, you can use the Swing "ImageIcon" class.
