We use the icons they prefer. If you want different ones, they need to pick them. You can open bugs for that if you like (for the individual applications), thought I am not sure how well perceived that will be. As Kate maintainer, I can say I prefer the current icon, thought I have already the plan to get a completely new one that is more distinctive for the future.
