I've been having this issue with both 18.04 and 16.04 Ubuntu MATE since
I installed an Nvidia GTX 1060. The system can run stably for days, or
it can start freezing randomly and I have to manually reset, or the
system freezes and then reboots itself. Browsers are also affected, and
I've not found one that doesn't randomly crash, though Opera is
particularly affected.  This is the hardware spec of my system:

md5sum was fine when I checked the intallation usb, and the fact that
it's affected both 16.04 and 18.04 (though 18.04 significantly less)
indicates there is a problem which I suspect is linked to the Nvidia
graphics card in some way, as it's also been an issue with Second
Life/OpenSimulator viewers that also randomly freeze requiring a hard
reboot of the system.
