I think it's just not listed because it's only used in Germany. So more
well known ones were used as examples. FSK is the Freiwillige
Selbstkontrolle der Filmwirtschaft
(https://en.wikipedia.org/wiki/Freiwillige_Selbstkontrolle_der_Filmwirtschaft).
The preference works with any prefix
Hmm, I've tried it again, and Koha will definitely stop issues if I use PG 13
in 521$a. But it will not stop issues, as it used to do, when using FSK 13.
I did find this information here

We have been using Age restriction in Koha for 2 years, using field 521$a to
input our restriction information (FSK 13) and mapping that to
biblioitems.agerestriction - to restrict the age of adult graphic novels to
people over the age of 13. AgeRestrictionMarker is set in
