Probably you need to rebuild the zebra index. Is the indexer daemon enabled?

there is no error message? Can you check the koha-error-log or 
plack-error-log?

If we call a book, and selected EDIT REGISTER, we changed some data (i.e,
the title), when we saved it: NOTHING happen.

Changes are not saved and without any error.
