You may need to remove the Tag NOTE from the list of items being
exported but I don't know whether all the things you are talking about
use that Tag or not.
If you are using the section with checkboxes on the Customise screen
there are 3 that cover General Notes, Research Notes and Medical
I want all notes omitted when exporting to gedcom.
With notes, I mean all long text that can be linked to people, events,
places and so on (gedcom tag NOTE)
I select File -> Export -> Gedcom File -> Produce file for Legacy ->
Customize
And under Export these items I remove NOTE
But still
Use Search > Find > Detailed Search to create a list of all the people
using your tag (I assume you want a separate report for each one).
When you have the Search List results you can use Options > Print to
create a report.

was named "Mary Mills", the descendant report shows "Mary Mills (Harry) was
born on...".

each of the names in brackets can have either their number in the report
or a generation number - your choice.

Not that I know of. It shows surnames for women in the descent line and
men with different surnames but not for the men in the direct male to
male line of descent.
