In fact it turns out we were binning any print-option which didn't have a
comment in the PPD,

Thanks! Well, I found the queue files in /var/spool/cups directory. After
putting the printer offline, I could then view the job attributes to see the
names (and values) that Libreoffice doesn't pass on

notourbug :-) Ultimately this sort of tray/destination stuff is a fairly basic
