I just downloaded the nightly build for 2022 02 11 and it hasn't crashed yet.
Apologies but I needed to use it and needed to see if the nightly build would
work. So far it works. 2022-02-11_07.30.09/

Is the automatic save option activated in your LibreOffice user preferences ?
If so, what interval is it set to ?

When LO crashes, do you get a crash report or crash log produced by macOS ?

You can check for these with the Console.app in the Utilities folder.
Search for the string "soffice" in the log files when running the Console.app.
It will point you to the location of the file if the system has registered
anything. You can then upload that file here, but check in a text editor
beforehand that there isn't any confidential information included that you
wouldn't want to be publicly visible on the bugtracker.
