For 3 domains, don't use MySQL unless you're using MySQL for
other reasons as well. You don't need the added overhead of
running a full database server.
MySQL is just one of many backends. You can also just use local
files.

system and I can telnet in and send email all day but when I try to send

Postfix is just smtp, unless you are running a mailserver for your
domain, you will need a tool like fetchmail in order to recieve your
pop/imap mail.
