I compiled LyX 2.4.1 on Ubuntu 22.04 with Qt6 enabled.
Steps to reproduce:
1. Create a new document: File > New
2. Create an inline formula: Insert > Math > Inline Form

I can confirm the observation of Dan: Insert > Special Character > Symbols
dialog box is completely devoid of symbols.
This is on Mac OS 10.9 with the 2.1.0beta2 Mac binary produced by the LyX team
