Do you have 3 different pdf viewers under View?
pdflatex doesn't work with .eps files, did you use dvipdfm?

LaTeX behavior (expected), I think -- nothing to do with LyX.  If you 
want to see the layout in its full glory, insert a standard "paragraph" 
with a hard space (C-space) as a place holder wherever text is destined 
to go.

The short answer is: no problem.

When you moved it, LyX turns to the default preferences file located  
within the LyX.app bundle. It will create a new preferences file in ~/ 
Library/Application Support/LyX/ only if you modify any settings.

UTF-8 is planned for lyx 1.5.  The 1.5 development should start
up after 1.4.0 is released.  That release may happen anytime now,
perhaps even today.
