You need to add the title also as a booktitle, e.g.:

@Collection{ BennettBooks91,
title = {Books and printing. {A} treasury for typophiles},
booktitle = {Books and printing. {A} treasury for typophiles},
editor = {Paul A. Bennett},
publisher = {Frederic C. Beil},
address = {Savannah, Georgia},
year = 1991
}

This is because the title field is overwritten by the chapter title in 
InCollection (and InProceedings).
