You will find the examples files if you "control click" the LyX.app icon and choose to "show package content" in the folder that opens you will find the example folder in the Resourses folder that you will find inside the Contents folder. In the FInder choose from the Go menu Go to Folder, In there type / usr og any directory you want to go to. Not all folders are visible int the Finder but it is possible to see all folders using this.
