I do not understand. AFAICS, undo works well after Ctrl+m.
I suppose the aim is to reverse the LaTeX-Code -> math-inset
conversion.
This can be done selecting the content of the math-inset (but not
the
inset itself), copying (Ctrl-C) and pasting as text (Ctrl-V
*outside* a
math inset). It might also work pasting with the middle mouse
button.
