bibtex8 does not support unicode, only 8-bib encodings (as the name
implies). If you need utf8, there is no way around biber.

you have to use backend=bibtex8 with bibtex8. And use an appropriate
encoding in the bib file.

This may be so if you choose 'Use non-TeX fonts' in Fonts (then it
uses Unicode by default). I would suggest that you try to create a
document using defaults, and then you should be able to change the
encoding.

What LyX version?

Are you sure it is a problem in the formula, not the surrounding text?

You can try to find the "offending" character looking at View>Source
(check the whole document box): you should find the problematic char
highlighted.

Document > Settings > Language. Under Encoding, choose "Other", then
"Unicode (utf8)".

Document->Settings->Language.
Uncheck "Use language's default encoding" and select "utf8" (not "UTF8" 
or "utf8x") in the encoding checkbox.

If you could find out which character/symbol in your document causes this, we 
could try and implement support in LyX.
(or just send me the document in private, if this is OK with you).
