I’ve deleted and set up again this mail account on my Mac. Now however, when I
hit the delete key on an email, it brings up a message saying unable to move
message to folder [null]. Anybody know what’s going on?

You might have to also reset the mail data base. as well, but first reset
yoru mail settings if there is a way with out deleting your plist file.

It may also be that the Mail settings have somehow got corrupted, well

I've had this happen. I don't remember how I solved it, but check the mailbox
settings, and see if it has the various mailboxes setup to put things into. I
did fix it, so it's something fixable from the mail app, because I don't
remember having to do anything out of the ordinary to solve it.
Before I got responses to my message, I deleted and created the account again,
but this time I changed from imap to pop3, and all is working. I don’t believe
changing the delivery method has had anything to do with fixing this, but
mention it just for purposes of clarity -

turn on airplane mode, then using the actions setting on the rotor, they will
delete, but for some reason they don’t when I am connected via wi-fi or 3g! -

I don't know if iPhones have memory buttons, like the Androids.
With an Android phone, if you long-press a number, it does a memory dial for
you.
