Just got a new iPad air. As it’s not a personal machine I’m not restoring from
an old backup.
Am I missing something, or have the options for syncing mail accounts
disappeared from iTunes? I can enter manually (not a huge deal) but if I can
avoid it I’d prefer not to.

I think manual is your only option, I'm afraid. I'm not sure why they
eliminated the options from iTunes, but they appear to have done so.
