I've eventually found that it seemed more or less related to hibernation mode
and a quick fix was to do this:
sudo pmset standby 0
sudo pmset autopoweroff 0
I've changed the parameters 2 days ago and have yet to have crashed when before
it was 2-3 times a day.

Not definitive, but it looks like a problem with the APFS structures.
I'd boot back to recovery mode, then run Disk Utility repair over the root
drive partition.
