To change the app used to open a document do the following.
In Finder, select the document, then choose File > Get Info.
In the Info window, click the disclosure triangle next to “Open with”.
Activate the pop-up menu, then choose Finereader.

then reopen the pdf file. So save the pdf file first then open Fine Reader and
convert it. I know it’s a few more steps but I think they took out the old way
of doing it right from an email or just right from a file
