You need an app like ABBYY Fine Reader or some other OCR capable app to convert
a scanned document to text. Using Image Capture will scan and print it nicely,
but the translation into text requires more.

Hi All,
Several months ago I sent a message to the list wondering how I could use my
scanner to read print documents. It was suggested that I use the Image Capture
app and I have tried that. I’m able to scan in a page, but can’t seem to get
the image converted into a text (or Word) format.
