Hand-coding midi files on Mac?

Hi all, I want to create music on the Mac. I know Garageband is the default answer, but here's the thing: I can't actually play the piece, but I can construct it. That is, I could tell the computer to play these two notes with the right hand for x measures, while doing this with the left hand.
