Actually, it sounds like you were in a list view with sort by date added and categories enabled. Try going to the view menu in the menu bar, and turning off categories now, the category headings will be gone, and your files will be sorted by date added. If you don't want this sort mode, you can

The open dialog is very similar to a finder panel, including having options to switch views with command key. It sounds like you have this as a list view with group by date in place. So pressing command-1 to switch to Icon view or command-3 to switch to column view should help. There are also se
