Double-tap and hold with two fingers. You’ll hear a series of clangs, after
which you can type in a new label. Click the Done button and VoiceOver will
read the new name.
Interestingly, in the App Switcher, VO will read the new name, but when you
close the app, it will be announce
I believe the triple click with three fingers will allow you to rename apps

I’m using iOS10 beta 3. Is there any way to change what VO reads as the app
name? Thanks.
