It's a long shot, but could you delete the downloaded update? I know you can do
that with iOS updates before they get installed, by going to your storage
settings. I'm not sure if watchOS updates are similar, but it might be worth
trying.

I do know it takes a longer time to update the watch os but that's why I do
the update over night and my watch is on charge
But still yeah it's a couple of hours at most to update the watch last time I
did it.
