Is there a simple way to convert a pdf, in this case the dragon
dictates user manual, to a text file.
Or does any one have any advice on working with large pdfs?

There was someware a plugin you could install to convert pdfs in text edit to
rtf or what not. Try looking at http://apple.com/downloads and
http://icanworkthisthing.com as a start.
